Spending my morning applying for PA state licensure, which I knew would be hair-pulling agony. To offset this, I decided to make a little vanilla tahini granola. With a scent like this wafting in my nostrils, there’s no WAY I can let frustration levels rule me. Life hacks!! Okay, super simple recipe below. Serves as both amazing breakfast/snack as well as aromatherapy.
Ingredients
Dry ingredients:
- 2 cups oats
- 1/4 cup flax seed
- 1 tsp cinnamon
- 1 cup pecans, chopped
Wet ingredients:
- 1/2 cup coconut oil
- 1/4 cup maple syrup
- 1/4 cup tahini
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 300F
- Combine dry ingredients in one bowl. Combine wet ingredients in another. Heat wet ingredients to thin (I heated in microwave for ~30 seconds. Though I know microwaves are not cool anymore. The horror that I even own one!! You could also combine over a very low heat on the stovetop).
- Mix wet with dry.
- Line a baking tray with parchment paper.
- Scatter granola mix on parchment paper.
- Bake for 15 minutes. Stir.
- Bake for another 15 minutes.
- Serve!!
***note: if you like really chunky granola, firmly pack the mixture on the baking sheet. When you take it out, break into chunks
