Vanilla Tahini Granola

Spending my morning applying for PA state licensure, which I knew would be hair-pulling agony. To offset this, I decided to make a little vanilla tahini granola. With a scent like this wafting in my nostrils, there’s no WAY I can let frustration levels rule me. Life hacks!! Okay, super simple recipe below. Serves as both amazing breakfast/snack as well as aromatherapy. 

Ingredients

Dry ingredients:

  • 2 cups oats
  • 1/4 cup flax seed
  • 1 tsp cinnamon
  • 1 cup pecans, chopped

Wet ingredients:

  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup tahini
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 300F
  2. Combine dry ingredients in one bowl. Combine wet ingredients in another. Heat wet ingredients to thin (I heated in microwave for ~30 seconds. Though I know microwaves are not cool anymore. The horror that I even own one!! You could also combine over a very low heat on the stovetop). 
  3. Mix wet with dry.
  4. Line a baking tray with parchment paper.
  5. Scatter granola mix on parchment paper. 
  6. Bake for 15 minutes. Stir. 
  7. Bake for another 15 minutes. 
  8. Serve!! 

***note: if you like really chunky granola, firmly pack the mixture on the baking sheet. When you take it out, break into chunks
