New meal prep list!!!! Grocery list and recipes and meal ideas below!

Recipe list: 

  • 2 summer squash
  • 1 bunch kale
  • 1 bag arugula
  • 2 Japanese yams 
  • 5 apples
  • basil
  • hummus
  • 2 avocados
  • 5 large carrots 
  • 1 onion
  • garlic
  • 4 lemons
  • dozen eggs
  • chicken
  • 1 can of corn
  • 1 can of salsa
  • 1 can of diced tomatoes 
  • 1 can refried beans
  • FLOWERS!!!
  • spices: nutritional yeast, salt, pepper, paprika, oregano, cinnamon, nutmeg
  • coconut oil

Apple oat bake:

  • 3 cups oats 
  • 1 tsp baking powder
  • 1 tsp baking soda 
  • pinch of salt 
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 3 eggs
  • 2 tbsp maple syrup
  • 2 apples
  • 1/4 cup almond milk
  • pinch of nutmeg
  • 1 tsp cinnamon
  1. Set oven to 350F
  2. Slice up 2 apples
  3. Saute on stove top (I used a cast iron pan) with coconut oil, cinnamon, nutmeg, vanilla extract
  4. In a separate bowl, mix together oats, baking soda, baking powder, and pinch of salt 
  5. In another bowl, mix together eggs, maple syrup, and almond milk
  6. Combine egg and oat mixture and add that to the cast iron pan apples 
  7. Put cast iron or pan into oven for 30-40 min, until top is golden brown
  8. Top with: bee pollen, almond butter, cinnamon 

Roasted Japanese yams + hummus / muhammara 

  • preset oven to 350 F slice yams 
  • cover with olive oil / spices of choice
  • roast for 40-45 minutes 
  • dip with hummus (I bought muhammara from the farmer’s market)

Meal prep tip: prep apple oat bake first and then do the Japanese yams. Bake them simultaneously. As the oat bake and yam wedges are baking, toss the chicken crock pot mix in the crock pot: 

Crock pot chicken salsa mix: 

  • chicken 
  • 1 bottle salsa 
  • 1 can diced tomatoes 
  • 1 can corn
  • 1 onion, chopped 
  • 5 carrots, peeled and chopped
  • spices: chile powder, paprika, salt, pepper
  1. Toss all ingredients in the crock pot on high for 4 hours 
  2. Shred chicken when finished 
  3. Top with: avocado, hot sauce, cilantro, etc.

Other: 

  • summer squash noodles!!!!! I used these for an egg breakfast and for raviolis!!  
    • 4 cloves garlic, chopped
    • 1 shallot, chopped
    • 1 tbsp butter
    • juice of 3 lemons
    • salt, pepper 
    • basil
    • summer squash noodles 
    • wilted arugula
    • raviolis 
      • saute butter with garlic, shallots, salt, pepper, lemon juice 
      • add in noodles 
      • top with raviolis (I got mine from the farmer’s market)
  • salads with hummus and farmers market tomatoes and refried beans for dinner
