January 24th. National peanut butter day. So I whipped up this super simple vegan peanut butter cookie dough! I don’t really have anything else to say bc my mouth is full with these in it. So yeah, that’s all folks! Recipe below.
- 2 cups almond flour
- 1/2 cup creamy peanut butter
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp almond milk
- 1/2 cup chocolate chunks
Combine peanut butter, maple syrup, spices, vanilla extract, and almond milk in one bowl. Whisk together. Add in almond flour. Add almond milk 1 tbsp at a time until dough forms. I used 2 tbsp. Then fold in chocolate chunks.
Keep refrigerated or frozen and consume as desired!

~12 bites! I didn’t calculate nutrition / macro info. I usually have one as dessert or a snack throughout the day!
