Pumpkin Banana Muffins

With yoga teacher training most weekends, I need quick and easy breakfasts / snacks on hand. Hence these handfuls of pumpkin muffins! Super easy to make and guaranteed to make your kitchen smell amazing. 

Dry ingredients: 

  • 1 cup oat flour 
  • 1 cup almond flour 
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda 
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of sea salt 
  • 3/4 cup pecans, chopped

Wet ingredients:

  • 2 eggs
  • 1/2 cup pumpkin puree 
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract 
  • 1 overripe banana, mashed

The details: 

  1. Preheat oven to 350F
  2. Combine wet ingredients 
  3. Combine dry ingredients 
  4. Combine wet with dry. Fold in 1/2 cup chopped pecans.
  5. Line muffin tins. 
  6. Top with 1/4 cup chopped pecans 
  7. Bake for 15 minutes
