With yoga teacher training most weekends, I need quick and easy breakfasts / snacks on hand. Hence these handfuls of pumpkin muffins! Super easy to make and guaranteed to make your kitchen smell amazing.
Dry ingredients:
- 1 cup oat flour
- 1 cup almond flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- pinch of sea salt
- 3/4 cup pecans, chopped
Wet ingredients:
- 2 eggs
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1 overripe banana, mashed
The details:
- Preheat oven to 350F
- Combine wet ingredients
- Combine dry ingredients
- Combine wet with dry. Fold in 1/2 cup chopped pecans.
- Line muffin tins.
- Top with 1/4 cup chopped pecans
- Bake for 15 minutes

You could try a flax egg! 1tbsp flax seed with 2.5 tbsp water, stirred until thickened.
