I’ve never really been a pie person. I’m all about the cobblers with that added crunch. This recipe will now be my new favorite version of crunches. They say abs are made in the kitchen, after all. This is gluten free, and the topping’s main ingredients are oats and almond flour. Recipe below!
Ingredients:
Filling:
- 5-6 peaches
- 1/3 cup local honey
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- optional: 2 tbsp arrowroot starch (to create a thicker consistency)
Topping:
- 2 cups oats
- 1 cup almond flour
- 1/2 cup coconut flakes
- 1/2 cup coconut sugar
- 1/4 cup coconut oil
- 2 tbsp almond butter
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
Slice peaches and place in 9×9 glass plate. Add and mix honey, vanilla extract, cinnamon, and optional arrowroot starch.
Place oats, almond flour, cinnamon, coconut sugar, coconut flakes, nutmeg, and ground ginger in a bowl. Combine coconut oil, almond butter, and vanilla extract and heat until smooth. Pour mixture over oats and mix all together. Pour oat mixture over peaches. Should be slightly crumbly.
