I am definitely one prone to that mid-week meal prep dread. Which is why NOT prepping breakfast is sometimes on the menu for me. That way, in the middle of the week I can make a big batch of overnight oats, and then vary up the toppings. This one was just maple vanilla with some dairy-free yogurt and a little bit of vanilla. With various frozen berries I had left over in the freezer. You could easily switch it up and add a different fruit or add cacao in the oat mixture for chocolate oats. Super filling, not boring, and full of fiber. Triple win.
Simple, healthy overnight oats yogurt parfait
Just a few ingredients you probably already have on hand and breakfast is magically made for you overnight!
- 1 cup rolled oats
- 3 tbsp chia seeds
- 1/4 cup slivered almonds
- 1/4 cup coconut flakes
- 2 cups almond milk
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/8 tsp sea salt
- 2 tbsp maple syrup
- 1 cup plain, unsweetened dairy-free yogurt
- 1.5 cups frozen berries

Mix all ingredients except for yogurt and berries in a large bowl and let soak overnight or 3-4 hours.

In the morning, alternate layers of berries, yogurt, and overnight oats mixture.

Top with nut butter of choice and a dash of more cinnamon if desired.
