One Pan Vegan Garam Masala with Turmeric Rice

Committing to making a bunch of one pan meals this month with ingredients that you already have in your pantry. Starting with this super simple one! Read on for the recipe.

What you’ll need: 

  • 1 can coconut milk
  • 1 can chickpeas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 yellow potatoes, diced
  • 1 cup mushrooms, sliced
  • 2 cups fresh kale
  • 1.5 tsp garam masala 
  • 1 tsp turmeric
  • 1/2 tsp paprika 
  • 1/4 tsp mustard seed
  • 1/4 tsp ground ginger
  • salt and pepper
  • 2 bay leaves
  • avocado oil

Get after it:

  1. Dice onions and sauté in avocado oil. After ~2 minutes, add potatoes and mushrooms and continue to sauté until potatoes are al dente, approximately 15 minutes.
  2. Add coconut milk and spices and let simmer for another 10 minutes.
  3. Stir in chickpeas and kale. Remove from heat and remove bay leaves.
  4. Serve with rice (I made by making jasmine rice according to instructions with bone broth and adding in 1/5 tsp of turmeric, salt, and black pepper).
