Committing to making a bunch of one pan meals this month with ingredients that you already have in your pantry. Starting with this super simple one! Read on for the recipe.
What you’ll need:
- 1 can coconut milk
- 1 can chickpeas
- 1 onion, diced
- 2 cloves garlic, minced
- 2 yellow potatoes, diced
- 1 cup mushrooms, sliced
- 2 cups fresh kale
- 1.5 tsp garam masala
- 1 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp mustard seed
- 1/4 tsp ground ginger
- salt and pepper
- 2 bay leaves
- avocado oil
Get after it:
- Dice onions and sauté in avocado oil. After ~2 minutes, add potatoes and mushrooms and continue to sauté until potatoes are al dente, approximately 15 minutes.
- Add coconut milk and spices and let simmer for another 10 minutes.
- Stir in chickpeas and kale. Remove from heat and remove bay leaves.
- Serve with rice (I made by making jasmine rice according to instructions with bone broth and adding in 1/5 tsp of turmeric, salt, and black pepper).
