When you’ve had a long day and just have zero desire to cook / also are running essentially on all pantry and freezer items? Same, tho. So just thaw out some salmon from the freezer the night before, then make this one pan meal in no time at all. Takes less than a half hour total and 5 minutes to clean up!
What you’ll need
- 2 salmon filets
- 1 large sweet potato (or 2 small), peeled and cubed
- 2 cups frozen broccoli
- 1/4 cup tahini
- 1 tbsp dijon mustard
- 1 tbsp whole grain mustard
- 2 tbsp honey
- 1/2 tsp dried thyme
- 1/4 tsp garlic powder
- juice of 1/2 lemon (~1 tbsp)
- pinch of salt
- few cracks of pepper
- for veggies: 1 tbsp avocado oil or avocado oil spray, 1 tbsp nutritional yeast, 1/4 tsp garlic powder, pinch of salt, dash of pepper
Get to it
- Preheat the oven to 350F and line tray with parchment paper.
- Place salmon, sweet potato, and broccoli on lined pan.
- Prepare the sauce by combining tahini, dijon mustard, whole grain mustard, honey, thyme, garlic powder, lemon juice, salt, and pepper.
- Lather sauce on salmon.
- Coat sweet potato and broccoli in olive oil and dash with nutritional yeast, garlic powder, salt and pepper.
- Bake for 20 minutes.
