One Pan Balsamic Fig Chicken + Smashed Pesto Potatoes

Another one pan wonder added to the books! Made in less than 30 minutes with a super simple clean up.

What you’ll need:

  • 1 package chicken breast (~1.5lb)
  • 1/4 cup fig jam
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh basil
  • 1/2 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried ginger
  • Salt and pepper to taste
  • 1 package assorted potatoes
  • 1 package pesto (I bought pre-made bc laziness hehe)
  • 1lb asparagus (salt, pepper, garlic powder)
  • avocado oil spray

What to do:

Line a pan with parchment paper. Preheat oven to 400F. Combine fig jam with balsamic vinegar, garlic powder, dried thyme, dried ginger, salt and pepper. Spread evenly on chicken and place on the pan. Place potatoes on the same pan and spray with avocado oil spray, salt, and pepper. Bake for 15 minutes. Remove from oven and add asparagus. Spray asparagus with avocado oil spray, salt, pepper, and garlic powder. Bake for another 10 minutes. Remove from oven, smash potatoes, and add pesto. #twistoflemons
