While cookies may not seem like a traditional breakfast, these ones are packed with whole grains, healthy fats, and even some protein. So why not!! Don’t let traditional eating standards tell you what to do!! Cookies for breakfast! Or anytime of day, really. Recipe below!
Dry ingredients:
- 1/2 cup rolled oats
- 1.5 cups oat flour
- 1/4 cup coconut sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of sea salt
- 1/2 tsp baking powder
Wet ingredients
- 2 eggs
- 2 tbsp butter, melted
- 2 tsp vanilla extract
- 1/4 cup maple syrup
To fold in:
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350F
- Combine dry ingredients in one bowl
- Combine wet in another bowl
- Mix thoroughly.
- Fold in chocolate chips
- Sprinkle PHAT SEA SALT FLAKES on top.
- Bake for 9-10 minutes for slightly underdone cookies, 11-13 minutes for a bit more golden brown.
