There are these weird, branny muffins from Trader Joe’s that I used to be hooked on in college. So figured I’d make a version of my own! Lots of fiber and healthy fats to keep you full and satiated all morning!
Ingredients:
Wet ingredients:
- 2 eggs
- 2 tbsp molasses
- 1/4 cup maple syrup
- 1/2 cup apple sauce
- 2 tbsp melted coconut oil
- Vanilla extract
Dry ingredients:
- 1 cup almond flour
- 1/2 cup oat flour
- 1/2 cup oats
- Cinnamon, nutmeg, ginger
- Baking powder
To fold in:
- 1/2 cup frozen blueberries
- 1/2 cup frozen raspberries
Directions:
- Preheat oven to 350F.
- Mix dry ingredients in one bowl, wet in another.
- Combine wet with dry.
- Fold in berries.
- Put into lined cupcake trays.
- Bake for 30 minutes, or until tops are golden brown.
