This is BASICALLY all of fall wrapped into one dish. thank you and goodnight.
Ingredients
- 2 acorn squash
- 1 package ground lamb
- 1 apple, diced
- 1 cup mushrooms, sliced
- 1 onion, diced
- 2 cups fresh spinach
- 1/4 cup fresh sage, chopped
- spices: salt, pepper, garlic powder, nutmeg
- 1/2 cup cheese of choice
- 2 tbsp avocado oil
Directions
- preheat oven to 400F and slice acorn squash in half
- scoop out seeds and discard (or save and use to bake for a snack!)
- drizzle each with olive oil, salt, and a dash of nutmeg
- bake for 40 minutes, or until softened
- in the meantime, dice onion and sauté in avocado oil until fragrant
- add ground lamb and sauté for 2 minutes
- add in mushrooms, sage, spices and sauté for another 3 minutes
- add in diced apple and stir until they soften
- when acorn squash is finish, scoop ground lamb mixture into squash and top with ~2tbsp of cheese
- place back in the oven until cheese is melted
- top with fresh sage
