Lamb, Mushroom and Apple Stuffed Acorn Squash

This is BASICALLY all of fall wrapped into one dish. thank you and goodnight.

Ingredients

  • 2 acorn squash
  • 1 package ground lamb
  • 1 apple, diced
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cups fresh spinach
  • 1/4 cup fresh sage, chopped
  • spices: salt, pepper, garlic powder, nutmeg
  • 1/2 cup cheese of choice
  • 2 tbsp avocado oil

Directions

  • preheat oven to 400F and slice acorn squash in half
  • scoop out seeds and discard (or save and use to bake for a snack!)
  • drizzle each with olive oil, salt, and a dash of nutmeg
  • bake for 40 minutes, or until softened
  • in the meantime, dice onion and sauté in avocado oil until fragrant
  • add ground lamb and sauté for 2 minutes
  • add in mushrooms, sage, spices and sauté for another 3 minutes
  • add in diced apple and stir until they soften
  • when acorn squash is finish, scoop ground lamb mixture into squash and top with ~2tbsp of cheese
  • place back in the oven until cheese is melted
  • top with fresh sage
