Lamb Burgers with Cucumber Tahini Salad

I’m always looking for more ways to get excited about dinner time. Usually this is done by playing with new herbs and flavors. Here is the easiest ever burger recipe with the most DELIGHTFUL cucumber tahini salad that I recommend you put on anything and everything.

for the burgers:

  • 1 package ground lamb (~1.5lb)
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • salt and pepper
  • for topping: feta, fresh dill, cucumber tahini salad
  1. Combine all ingredients together and form into patties.
  2. Grill or sauté until browned on both sides (145 degrees if you have a grill thermometer).

for the cucumber tahini salad: 

  • 1 cucumber, cubed
  • 1/2 red onion, diced
  • 1/4 cup tahini
  • juice of 1 lemon
  • 2 tbsp fresh dill
  • 1/4 tsp garlic powder
  • salt and pepper
  1. Combine cucumber and red onion in one bowl. In another mix together tahini, lemon juice, salt, pepper and garlic powder. Evenly toss cucumber and red onion in tahini mixture.
  2. Top on burger along with buns, tomatoes, lettuce, feta, and fresh dill.
