Honey Lemon Rosemary Chicken

Feeling down in the dumps that it’s monday? I’ve got you. This one pan meal is sure to brighten your spirits and your taste buds. Lots of bright lemon, herbaceous rosemary, sweet honey and crispy chicken. Serve on top of your favorite salad, a bed of rice/quinoa, or with your favorite veg!

What you’ll need: 

  • 2 tbsp high heat oil (I used avocado oil, butter/ghee would also work)
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 package chicken thighs
  • 2 lemons
  • 2 tbsp honey
  • 2 sprigs rosemary
  • Salt and pepper 

Preheat oven to 375F. Bring oil in pan to medium heat, add in onion and sauté for ~3 minutes, then add in garlic and continue to sauté. Add salt and pepper to the chicken and place in saute pan. Flip over after ~5-7 minutes. Place juice of 2 lemons in pan, as well as zest of one lemon. Add sprigs of rosemary and drizzle 2 tbsp honey on top. Place in oven and bake for 10 minutes, until chicken is cooked throughout.
