Ready to naCHOmp down on those leftover nachos from the weekend? Here’s a perfect little pantry meal to use up all those leftover ingredients (looking at you almost stale tortilla chips and 1/2 empty jar of salsa).
This is essentially a deconstructed nacho casserole? Idk not sure but whatever I’m (casse)rolling with it.
What you’ll need:
- spaghetti squash
- Black beans
- 1 red pepper
- 1 jar salsa (or whatever you have)
- Crushed up tortilla chips
- Cheese
Bake spaghetti squash (or microwave). Then just assemble: spaghetti squash, rinsed black means, diced red bell pepper, salsa, tortilla / taco shells, cheese. In the oven at 350F just until cheese melts, ~10 minutes. Top with avocado and cilantro.
