Creamy Tomato Pasta Sauce

I generally consider myself not very cool per millennial definition. I don’t have a TikTok. I don’t watch vlogs. I struggle with “golden hour” and end up squinty rather than dewy/glowy. I miss 9/10 movie and song lyric references. Except for one. And that’s “getting lost in the sauce.” Which is perfectly appropriate because per urban dictionary it means “generally clueless to one’s surroundings.” Ie me when a familiar reference is made. But also APTLY applies to this meal. The sauce is so creamy and flavorful you’ll also be tempted to get lost in it.

I hesitate to even call this a recipe because it’s just so easy. But it’s a staple in my kitchen and can be tossed/lost on pretty much anything. Pasta? yup (see below). Chicken? mmmmhm (emphasis on the mMmMmm part). By itself? questionable (control yourself, Katie).

Okay enough of the chitchat. Recipe below.

Creamy Tomato Pasta Sauce

  • 1 can fire roasted diced tomatoes
  • 1 can coconut milk
  • 1 lemon ((juiced))
  • 3 cloves garlic ((minced))
  • pinch sea salt
  • 1/2 tsp paprika
  • 1 onion (diced)
  1. Dice onions and garlic and saute over stove top until fragrant.

  2. Combine remaining ingredients and let simmer 5-10 minutes.

  3. Use as pasta sauce or on chicken.
