Coconut Masala Salmon with roasted vegetables

It’s a Monday, which means I’m putting a true minimum into dinner effort. One pan, some veggies, a stellar marinade. Thrown together and all cleaned up in 20 minutes. Thank you and goodnight.

Grab this

  • 2 salmon filets 
  • 2 peppers 
  • 1 red onion
  • 1 medium sized sweet potatoes
  • 2 tbsp coconut cream
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/4 tsp paprika
  • 1/8 tsp mustard seed
  • 1/8 tsp garlic powder
  • juice of 1/2 lemon
  • pinch of salt 
  • cracks of black pepper
  • olive oil 

Do this

  1. Preheat oven to 350F
  2. Line a sheet pan with parchment paper
  3. Chop vegetables and place on pan. Drizzle with olive oil, salt, pepper, and a few shakes of garlic powder.
  4. In a separate bowl, combine coconut cream, turmeric, garam masala, paprika, mustard seed, garlic powder, salt, pepper, and lemon juice. Spread on salmon.
  5. Bake all for 15-20 minutes.
