It’s a Monday, which means I’m putting a true minimum into dinner effort. One pan, some veggies, a stellar marinade. Thrown together and all cleaned up in 20 minutes. Thank you and goodnight.
Grab this
- 2 salmon filets
- 2 peppers
- 1 red onion
- 1 medium sized sweet potatoes
- 2 tbsp coconut cream
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/4 tsp paprika
- 1/8 tsp mustard seed
- 1/8 tsp garlic powder
- juice of 1/2 lemon
- pinch of salt
- cracks of black pepper
- olive oil
Do this
- Preheat oven to 350F
- Line a sheet pan with parchment paper
- Chop vegetables and place on pan. Drizzle with olive oil, salt, pepper, and a few shakes of garlic powder.
- In a separate bowl, combine coconut cream, turmeric, garam masala, paprika, mustard seed, garlic powder, salt, pepper, and lemon juice. Spread on salmon.
- Bake all for 15-20 minutes.
