Still on my “ingredients you likely already have” recipe train, and SO excited about this one. It’s recreated from one of my favorite Boston restaurants called Veggie Galaxy, which very unfortunately (though responsibly and admirably) closed its doors indefinitely during this time of social distancing. The recipe is super easy to make and is such an incredible tuna alternative!! Definitely in a new staple in the lunch / snack line-up!
- 1 can chickpeas, drained
- 1 tbsp tahini
- 1 tbsp olive oil
- juice of 1 lemon
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- salt and pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- 2 tbsp fresh dill
Blend chickpeas, tahini, olive oil, lemon juice and spices in food processor and pulse until dough forms. Fold in celery, red onion, and fresh dill.
