Chickpea Flour Waffles

Sometimes I wonder if I would like waffles so much if I didn’t have such a fierce love affair with Parks and Rec. And then I realize – who cares. Just make and eat the waffles.

What you’ll need:

  • 1.5 cups chickpea flour
  • 1 cup oat milk
  • 1 egg
  • garlic powder, salt, pepper

Do this:

  1. Blend all ingredients and whisk well
  2. Preheat waffle iron
  3. Spray with avocado oil / coconut oil
  4. Bake according to instructions
  5. Top with toppings of choice: I went with kale, sautéed mushrooms, pesto, avocado and basil
