Sometimes I wonder if I would like waffles so much if I didn’t have such a fierce love affair with Parks and Rec. And then I realize – who cares. Just make and eat the waffles.
What you’ll need:
- 1.5 cups chickpea flour
- 1 cup oat milk
- 1 egg
- garlic powder, salt, pepper
Do this:
- Blend all ingredients and whisk well
- Preheat waffle iron
- Spray with avocado oil / coconut oil
- Bake according to instructions
- Top with toppings of choice: I went with kale, sautéed mushrooms, pesto, avocado and basil
