Cashew Tahini bites

My favorite meals are always those that are unearthed from leftover ingredients, and this is one of them.

It’s so simple it almost seems silly. If you have some leftover dates, cashews, tahini (or any nut butter), cinnamon, chocolate and vanilla extract, get ready for your new favorite snack.

  • 1 cup dates
  • 1 cup cashews
  • 2 tbsp tahini
  • 1 tsp vanilla extract
  • few shakes of cinnamon
  • chocolate, melted, to coat or drizzle

Just combine all ingredients (except chocolate) in food processor and blend until sticky. Roll into whatever shape you want, douse in chocolate, consume liberally. I stored half in the fridge, half in the freezer.
