Brazil Nut Pesto Salmon

This is a “deconstructed” pesto.  Which to me is synonymous with laziness / I-don’t-want-to-have-to-clean-anything-ness.  Only takes 6 ingredients and no blender. Just chop, mix all together and lather on the salmon ~Herb~al Essences style because this simple, satisfying recipe induces tons of ooh’s and aah’s. HERBal because of the basil. Okay bye-sil; recipe below.

Ingredients:

  • 1/2 cup brazil nuts, roughly chopped
  • 1/4 cup basil, roughly chopped
  • 2 tbsp organic olive oil
  • squeeze of lemon
  • salt
  • pepper

After lathered on, put in 450 degree oven for around 10-12 min.

Superfood Spotlight

Brazil nuts are one of the best natural sources of selenium. One of the major nutritional benefits of selenium is increasing the HDL cholesterol to LDL cholesterol for a healthy heart.  Additionally, a recent study in the Journal of Medicinal Food suggests that this mineral may even help fight prostate cancer by inhibiting the growth of cancerous cells.  Selenium also helps regenerate vitamins E and C, so it’s great as a natural source of hair, skin, and nail health.  Lastly, since it’s an antioxidant, it helps the immune system fight against bacterial and viral infections, particularly those of cancer cells and herpes virus, cold sores, and shingles.
