Apple season in New England!!!!!!! As evidenced by this apple oat bake.
Ingredients
- 1.5 cups oats
- 1 cup almond flour
- 1/2 cup cassava flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- pinch of clove
- pinch of salt
- 3 eggs
- 1/4 cup coconut oil (or melted butter)
- 1 tsp vanilla extract
- 1/3 cup almond milk
- 1/4 cup maple syrup
- 2 apples (1 diced, 1 sliced on top)
- 1/4 cup sliced almonds
Directions
- Preheat oven to 350F. Line tray with parchment paper
- Mix dry ingredients in one bowl: oats, almond flour, cassava flour, baking powder, spices, and salt
- Mix wet in another: eggs, coconut oil, vanilla extract, almond milk, maple syrup
- Mix wet with dry, then fold in apple
- Transfer to tray
- Slice apple and spread on top
- Sprinkle sliced almonds on top of apple
- Bake for 30 minutes, or until top is firm and golden
