Vegetable soba noodle stir fry

I included a meal like this in one of my meal plans (I think this one), and it’s another one of¬†minimal effort, minimal brain power kind of ordeals. Like when you get home from work and just can’t (or)deal to break out the Pinterest creativity. Grab some veggies, some frozen edamame, some soba noodles and some sauce and you’re good to go. so easy. so quick. SO BAe.¬†

  • 1 package soba noodles
  • olive oil spray
  • 1/2 onion, chopped
  • 4 stalks celery, chopped
  • 1/2 tsp garlic
  • 2 bell peppers (I used one red, one orange)
  • 2 heaping handfuls of kale
  • 1 cup frozen corn
  • 1 cup frozen peas

sauce:

  • 1/4 cup coconut aminos (or soy sauce)
  • 2 tbsp olive oil
  • juice of 1 lime
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tsp grated ginger
  • 2 tbsp almond butter
  • 1-2 tbsp hot water to thin

Here’s how:

  1. Cook soba noodles according to instructions. Set aside.
  2. Spray pan with olive / avocado oil spray. Add diced onions and celery. Cook until translucent. Add garlic.
  3. Add peppers and continue to saute and stir, until softened. Add frozen corn and peas.
  4. Add soba noodles and kale. Continue to stir until kale is wilted.
  5. Add sauce and cook until evenly coated.
