Shrimp and Crab Soup

Shrimp and Crab Soup

The Re-SEA-pe’s below – because shrimp and crabs and ocean!!!!!! Ugh, Katie……………

Ingredients:

  • 2 TBSP coconut oil
  • 10 cherry tomatoes (halved)
  • 2 cups vegetable broth
  • 4 large carrots (julienned)
  • 1/4 cup cilantro
  • 1/2 pound lump crab meat
  • 1 pack frozen shrimp
  • 1 tsp crushed red pepper
  • 1 tsp Old Bay
  • 1/4 tsp garlic salt
  • 1/4 tsp sea salt
  • juice of one lime
  • 1/4 tsp fresh lemon┬ázest

Directions:

  • Heat the oil in a large saucepan and toss in the tomatoes.
  • Cook for 2-3 minutes then add in the remaining ingredients after chopping them
  • Continue marinating until the shrimp turns pink – around 20 minutes.
