Cinnamon Coconut Pecan Milk

Pecans are a nut that sit in our pantry neglected from Christmas until the following Christmas. I decided it was time for them to ~shine~. Plus if you’re looking for nut milks with no added preservatives or gums, then this may just pique(an) your interest. This took minimal ingredients and minimal effort – my kind of recipe.

What you’ll need:

  • 2 cups pecans
  • 1/2 cup coconut flakes
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 10 cups water
  • nut milk bag – like this one from Amazon 
  • Makes approximately 10 cups

Combine all ingredients and let sit overnight. Blend in a high speed blender until smooth. Strain in nut milk bag.
