Peanut Butter and Jelly Granola Bars / PB and Jamz

I started something awhile ago called PB&Jamz in which I featured a pre workout snack (more often than not which involved peanut butter) and a workout playlist. I think I’m gonna start doing that again, as evidenced by this post. Recipe and playlist below!


Chia seed jam:

  • 1 cup blackberries (I used fresh – frozen, and de-thawed works as well.
  • 1/4 cup chia seeds
  • 1 tbsp honey or maple syrup
  • 1/4 tsp vanilla extract
  • pinch of salt


  • 1 cup rolled oats
  • 1 cup almond flour
  • 2 tbsp peanut butter
  • 1/3 cup coconut oil
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup raw coconut crystals (or other natural sweetener)
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Do this:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Smash blackberries. Add chia seeds, honey, vanilla extract, and salt. Mix together. Put in fridge to cool and thicken.
  3. Melt coconut oil. Add in egg, vanilla extract and coconut crystals. Stir well.
  4. Slowly add in rolled oats and almond flour to the egg mixture and continue to kneed with hands, forming a dough. Add in peanut butter and mix thoroughly (I heated mine for about 30 seconds to soften and mix easier into the dough.) Lastly, add baking soda and salt and combine thoroughly.
  5. Line a square dish with parchment paper. Work dough into the dish.
  6. Spread chia seed jam on top of dough.
  7. Bake for 15-20 minutes.
