Peaches and Cream Energy Bites

Whenever I have anything peaches and cream or berries and cream I’m immediately transported back to the Starburst berries and cream commercial with the little dancing leprechaun lad whose haircut mimicked mine in the third grade: slightly longer than a bowl cut with curled under ends. Think Edna Mole from The Incredibles movie. So when I made these peaches and cream energy bites, I envisioned my younger self again, bowl haircut and all, doing a little jig from absolute splendor and taste bud delight. Clapping and jumping and heel clicking, etc. etc. etc. Go ahead and make them and see if a similar dance ensues.

What you’ll need:

  • 2 cups almonds
  • 1/4 cup coconut butter
  • 1/4 cup almond butter
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 scoop collagen peptides or vanilla protein powder or choice 
  • optional: adaptogens (I use Root and Bones – code lemons for 15% off)
  • 2 peaches (chopped)

What you’ll do:

  1. Place almonds in food processor and grind until a little chunky a little powdery. I like mine on the chunky side.
  2. Add in rest of ingredients and pulse until dough forms. 
  3. Sprinkle with coconut flakes.
  4. Rejoice.
  5. Eat.
  6. Say (pea)cheese and smile.
  7. Happiness.
  8. Dance.
  9. Shake your tail-feather and your bowl cut.
