Oatmeal Chocolate Chip Pancakes

Plancake Sunday has again reared its cherished, cheery, chocolatey face (chocolate because I got into Columbia this week and celebration lends a lot of waistline justification.) I suppose I could drone on and on about how I’m attempting to plan which school to go to / my upcoming work schedule, but that’s painfully dull, and prevents you from getting to the bottom of this post for the recipe. Ennnjeeeeeoooyyyyy

Ingredients:

  • 1 ripe medium banana
  • 1 tsp baking powder
  • 1 flax egg (1 tbsp flax mixed with 2.5 tbsp water)
  • pinch salt
  • 1/2 tsp vanilla extract
  • 1 tbsp almond butter
  • 1 tbsp coconut oil
  • 3 tbsp almond milk
  • 1/2 cup rolled oats
  • 1/4 cup buckwheat flour
  • 2 tbsp dark chocolate

Directions:

  1. Prepare flax egg by mixing flaxseed meal and water and letting set for 3-5 minutes.
  2. Mix ripe banana with baking powder, salt, vanilla, almond butter, almond milk, coconut oil and flax egg.
  3. Stir in oats and flour then add chocolate.
  4. Scoop spoonfulls (about 1/4 cup measurements) onto lightly greased griddle.
  5. Cook for 1-2 minutes on each side, or until golden brown.
