Mango Coconut Waffles

Mango Coconut Waffles

Me and the waffle maker going off in the morning is the modern equivalent of Pavlov’s dogs and the sound of the bell. Instant salivation. These are gluten and grain free, with just a dab of local honey for sweetener. Light, fluffy, summery and passed by my brother’s taste test, meaning a complete success. Recipe below!

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 3 eggs
  • 1/4 cup almond milk
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp honey (I used chai honey from Monica’s Honey Company. Check the post about it here!)
  • 2 tbsp coconut oil
  • 1 mango (1/2 in the batter, 1/2 for topping)
  • 1/4 cup coconut flakes for topping

Get crackin’:

  1. Combine dry ingredients (almond flour, coconut flour, baking powder, cinnamon, nutmeg).
  2. Whisk other ingredients (eggs, almond milk, honey, and coconut oil).
  3. Mix together wet and dry. Then fold in mango.
  4. Heat waffle maker and pour batter.
  5. Top with mango, coconut, chia seeds, almond butter, etc. etc. etc.
