Macadamia Nut Pulp Fudge Bites

Nothing brings me greater joy than repurposing old materials and making them new again. Herein marks the second recipe of sustainaballs: balls made from nut mylk pulp instead of throwing it out!! Recipe below.

What you’ll need:

  • pulp from 1 cup macadamia nut milk
  • 1/2 cup macadamia nuts
  • 2 tbsp cacao powder
  • 1/4 cup coconut butter
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1-2 tbsp macadamia nut milk (add 1 and pulse to see if this is enough to make the balls form. If not, add 1/2 tbsp at a time, until dough forms. For me, this was about 1.5 tbsp milk).
  • sweetener of choice: I added 2 tbsp maple syrup. You could also add a few dates, depending on your preferred sweetness.
  • optional roll-ons: shredded coconut, cacao powder, chia seeds, hemp seeds

What you’ll do:

  • Pulse it all together in the food processor.
