I love pancakes and I love vegetables, and I firmly believe you should never have to choose between your life’s passions. So this week for Plancake Sunday I combined them.  I added a little handful of spinach to a simple, staple pancake recipe and they tasted the exact same.  Kind of a fool proof way of sneaking in an extra serving of veg early in the AM, don’t you agree(n)?


  • 1/3 cup of old fashioned rolled gluten free oats
  • 1/4 cup coconut flour
  • 1/2 cup spinach (fresh or frozen)
  • 2 eggs
  • 1/2 cup almond milk
  • 1/4 tsp baking soda
  • 1/4 tsp apple cider vinegar
  • 1/4 tsp maca powder
  • 1/4 cup sweetener of your choice (I chose not to, and instead piled it high with naturally sweet toppings, like granola and almond butter)


  1. Put everything in a blender.
  2. Hit the on button.
  3. Put on the griddle.
  4. Flip. Then ~flip out~ when you taste them and realize you’ve already gotten a full serving of vegetables by 10 am.
