PPFish burgers

The title of this recipe is indeed a bit fishy. ***pppppffff*** reminds me of the sound of disbelief, and you may indeed be in disbelief of this recipe, considering it’s made with granola instead of bread crumbs. PPF (Paleo Passion Foods) granola to be exact, hence the double meaning of the PPF.¬†They’re a little sweet, a little savory, a little spicy and a lotta good. ¬†Plus, they’re entirely gluten and grain free and low in sugar thanks to this brand of granola! I’d coll(ard) it the ultimate success. Find the recipe below.

Ingredients:

  • 1 pound fresh wild haddock (any white fish will do)
  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped cilantro
  • 2 eggs, whisked
  • 1/2 cup Paleo Passion foods Caribbean Coconut granola (code lemons15 for 15% off + free shipping)
  • 1 tbsp coconut aminos
  • juice from 1 lime
  • 1/2 tsp garlic
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp olive oil / olive oil spray for pan.

Here’s how:

  1. Mince haddock. I did this in the food processor.
  2. Transfer to separate bowl and add onion, pepper, eggs, cilantro, PPF granola, coconut aminos, lime juice, garlic, paprika, salt and pepper.
  3. Form into patties. Heat oil in pan or stove top grill. Cook, uncovered, 10 minutes per side.
