Collard Wraps with Falafel and Hummus

I take back what I said about the entrance of fall. I’m desperately clinging to summer via seasonal vegetables and bright colors. This gives me a lot of falafeelings and will make your taste buds sing / hum(mus). It’s packed with fiber, protein, antioxidants, and flavor. Check out how to get it done below!

Falafel:

  • 1 can chickpeas, rinsed and dried
  • 1 tbsp turmeric
  • 1/4 tsp salt
  • 1/2 tsp pepper (increases absorption of turmeric!)
  • 1 tsp garlic
  • 2 tbsp olive oil
  1. Preheat oven to 350F. Pulse everything in food processor until dough forms. Form small patties (mine made about 10) and place in oven for 30-40 minutes, until firm to the touch on the outside.

Hummus:

  • 1 can chickpeas
  • 1/4 cup tahini
  • juice of 1/2 lemon
  • salt
  • pepper
  • 1/2 tsp garlic
  1. Empty can of chickpeas into a microwave safe bowl. Add salt, pepper, garlic to the bowl. Microwave for 5 minutes.
  2. Empty heated bowl into a food processor. Add lemon juice and tahini. Blend until smooth.

Tahini dressing:

  • 1/4 cup tahini
  • juice of 1/2 lemon
  • salt
  • pepper
  • 1/4 tsp garlic
  • water
  1. Combine tahini, lemon juice, salt, pepper, and garlic.
  2. Add 1 tbsp of water at a time and stir in between until tahini reaches desired consistency. For me this was 3-4 tbsp.
