Cinnamon Baba Ganoush

This cinnamon baba ganoush can be used as a dip or a spread, and really only has 5 ingredients + a few spices. So versatile. So go gnosh on the ganoush.


  • 3 small eggplants or one large
  • coconut oil spray
  • cinnamon
  • 2 tbsp tahini
  • 1/4 tsp garlic
  • juice of one lemon
  • salt and pepper to taste
  • nutmeg

Do this

  1. Preheat oven to 350F.
  2. Cut eggplant into coins. Spray with coconut oils spray and top with lots of cinnamon, salt, and pepper.
  3. Place in oven for around 40 minutes, until soft and golden.
  4. Place cooked eggplant in food processor.
  5. Add garlic, lemon juice, tahini, 1/8 tsp salt, 1/8 tsp pepper (I just gave a good shake of each), more cinnamon (around 1/8 tsp) and a dash of nutmeg.
  6. Blend until smooth.
  7. Sprinkle with a tad more salt/pepper and a few mint leaves if desired.
