Cider Citrus Waffles

I hate being hungover but I LOVE LESLIE KNOPE AND SHE LOVES WAFFLES AND IPSO FACTO I LOVE WAFFLES (just experienced such intensity of excitement that that was just as exhausting typing as it was reading.) Anyways, I just bought that hugely anti-inflammatory Fire Cider and I recently read that citrus is good for a liver cleanse, which birthed this creation.  Waffles that are gluten free, glutton free, delicious, anti-inflammatory, and liver cleansing. And paired with fiber packed peach(ia) seed jam. Goodbye hangover. Hello happiness.


  • 1 1/4 cup unsweetened almond milk
  • 1 tsp fire cider
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  •  1/2 cup gluten free rolled oats
  • 1 3/4 cups gluten free flour
  • 1 tbsp frozen concentrated orange juice
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • pinch sea salt

Peach Chia Seed Jam

  • 1/2 cup frozen peaches
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup


Jam: Put everything in a food processor or blender and blend until smooth. Then place in fridge while the waffles are baking.

Waffles: Mix everything together, spray the waffle maker, and get it going.
