Chocolate Coffee Ice Cream Sandwiches

I always thought I’d be terrible at playing the piano based on my average finger length. Looking back on this picture, however, I think the piano just didn’t motivate my fingers enough because I’m quite impressed with my ability to hold this massive ice cream sandwich in one hand.  Yet another skill to toss on the old LinkedIn page. If you trust yourself enough to make these, you’ll also be grabbing for them.  Once you emerge from the chocolate out (synonym for black out), you’ll be pleased to know the list of ingredients trumps that of the traditional Betty Crocker and B&J’s combo. Each has 10g less sugar per serving, and is equipped with pronounceable ingredients. Recipe and ingredient list below!

Retrieve these:

  • 1 box Simple Mills chocolate muffin and cake almond flour mix (available at Whole Foods)
  • 3 eggs
  • 1/3 cup brewed coffee
  • 1/3 cup coconut oil
  • 1 tbsp vanilla extract
  • 1 carton AlmondCrème coffee almond milk ice cream (available at Whole Foods)
  • 1 cup strawberries

Do this:

  1. Preheat oven to 350F
  2. Combine and whisk eggs, coffee, melted coconut oil, and vanilla extract. When combined, add Simple Mills chocolate muffin mix and stir until smooth. Pour into 8 inch baking pan and bake for 30-40 min.
  3. Cut and mash strawberries
  4. Once cake is done and cooled, cut them into circles and layer it on up. Cake, ice-cream, strawberries, more cake. Cue Rihanna song (cake) and do some other Rihanna song (work) on this bad boy.

 

Simple Mills Ingredients: almond flour, organic coconut sugar, cocoa, arrowroot powder, organic coconut flour, baking soda, sea salt

The New Barn AlmondCrème ingredients: water, organic almonds, organic cane sugar, organic coffee beans, organic egg yolks, organic carob flour, salt
