Chocolate Coconut Bites

When I was in college, Almond Joys when hungover were my weakness. The chocolate and coconut flavors soothed my soul. There is no logic behind this and I 100% never felt better after their consumption and yet they still remain one of my favorite flavor profiles. I fancied up the recipe and made them into bite sized form to nibble on throughout the week. Except with these ones I 100% do feel better after their consumption. ConsYUMption. Recipe below!

what you’ll need:

  • 1 cup almonds
  • 1/4 cup coconut butter (slightly warmed)
  • 2 tbsp cacao powder
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • pinch of sea salt
  • 2 tbsp almond milk
  • optional sweetener: 1-2 dates
  • shredded coconut for rolling

what you’ll do:

  1. Add 1 cup almonds to food processor and blend until a chunky crumble forms.
  2. Warm coconut butter in the microwave so it is slightly melted.
  3. Add coconut butter to food processor with almonds and 2 tbsp cacao powder, 1 tbsp chia seeds, 1/4 tsp cinnamon, 1/4 tsp vanilla extract, 1 date, and 2 tbsp almond milk.
  4. Roll in coconut shreds.
