Chocolate Coconut Bars

You know that one food that everyone had in college as their hungover downfall. That for me was waking up with my hand in a box of Puffins cereal. Oh, and almond joys. So two foods. I don’t know what it was – chocolate or coconut – that satisfied my state of pathetic decay, and yet I continued to seek their delight despite inevitably feeling even worse after consumption.  But check out this recipe revamp. This. This. THIS! I didn’t feel terrible after eating this. Plus these bars contain only five ingredients, including one of my favorite new grain-free and Paleo granolas. Recipe below!

Middle layer

  • 1 cup coconut flakes
  • 1 egg white

Top layer:

  • dark chocolate (I used 74% dark chocolate), melted.

Do this:

  1. Preheat oven to 350F.
  2. Soak dates in hot water. Set aside.
  3. Mix coconut flakes with egg white. Mold into 4 in x 4 in square. Bake until golden brown on top, about 10 minutes.
  4. Take pits out of dates, and place in food processor with 1 cup Choco-Nuts Paleo Passion Granola
  5. Mold sticky date/granola mixture into 4 in x 4 in square.
  6. Place baked coconut layer on top of sticky date layer.
  7. Cover whole thing in melted chocolate.
  8. Place in freezer for at least 1 hour, or until chocolate on top is frozen.

I used this granola because it’s low in sugar, and compliments the other high sugar ingredients of the bars. Plus, it makes this entire sweet treat grain free!
