Chocolate Cherry Chia Bars

THIS POST IS ABOUT HOW TO TELL YOUR FRIENDS YOU LOVE THEM CHERRY MUCH.  I believe so strongly in the power of a thoughtful care package, but I think sometimes there’s a tendency to send our loved ones inflammation-inducing sugar bombs when they’re feeling ill.  I’ve recently been reading about the amazing anti-inflammatory effects of tart cherries (see below), so I tossed these bars in a “get wellness” package for a friend in the hospital.  I really put my **heart** and soul into making them because I really do cher(ry)ish her!!!!!!!

Ingredients:

  • 2 cups rolled oats
  • ½ cup chia seeds
  • ¼ cup chopped dark chocolate
  • ¼ cup pumpkin seeds
  • 1 cup almond butter
  • ½ cup honey
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • ¼ cup dried tart cherries

Directions:

  1. In a large bowl, mix together the oats, chia seeds, dark chocolate, sunflower seeds, and salt.
  2. Mix almond butter, honey, and vanilla in separate bowl until smooth. Pour the wet mixture over the oat mix and stir until evenly coated. Then stir in the cherries.
  3. Press the mix into your desired shape and then place in the fridge to cool.

Tart cherries:
The anthocyanins found in cherries protect against conditions associated with inflammation and degeneration, including: cancer, cardiovascular disease, metabolic syndrome, Alzheimer’s disease, and obesity.  Obesity, for example, is recently believed to be caused by chronic low-levels of inflammation.  Ipso facto, reducing inflammation could reduce obesity.  By signaling off the inflammation switch, some researchers believe tart cherries produce a 65% reduction in early mortality!
Tart cherries are also believed to help with acute inflammation, such as muscle soreness and joint stiffness. Studies have also shown drinking tart cherry juice reduces adult insomnia by up to 90 minutes per night! Reach for tart rather than sweet, as the former have less sugar and double the amount of phenols.
