Carrot Cake Oat Energy Bites

I’m a firm believer in having vegetables at every meal. This becomes somewhat difficult during snack time when I really just want a slab of almond butter on a spoon / rice cake, preferably both. That’s when somewhat tasteless / neutral vegetables come into play, like spinach, zucchini, cauliflower, and carrots. Usually these go pretty undetected in smoothies, but I chose to showcase the mighty carrot in bite / ball size form this week. I have now used the “/” sign four times in this short post.   • 1 cup carrots
  • 1/2 cup almond butter
  • 5 dates, softened in hot water
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 scoop plant based protein powder
  • 1 scoop Organic Energy (code LEMONS for $10 off any order)
  • 1 cup oats
  • 1 tbsp chia seeds
  1. Place carrots in food processor. Pulse until shredded. Add in almond butter, softened dates, cinnamon, nutmeg, protein powder, and energy powder. Pulse until combined well.
  2. Transfer mixture to another bowl.
  3. Add oats and chia seeds.
  4. Roll, roll, roll, bite, bite, bite.
  5. Makes about a dozen bites.
