Cannellini Bean Basil Garlic Dressing

This recipe is quite similar to the white bean dip I made upon finding out I had a chickpea sensitivity, found here. This one, however, isn’t as thick and makes for an awesome salad dressing. I used it as such, but definitely versatile enough to be a dip or a spread, too! So many options for it, it’s just plain (ba)sil-ly!!

What you’ll need:

  • 1 can cannellini beans
  • 1/2 tsp garlic
  • 1/4 cup fresh basil
  • juice from 1 lemon
  • 1.5 tbsp tahini
  • salt
  • pepper

What you’ll do:

  1. Don’t drain water from bean can. I transferred all to a bowl and microwaved for 3 minutes. I find that by heating the contents of the can, the dressing or dip usually ends up smoother.
  2. Add beans with the water from the can to a food processor. Add all other ingredients. Blend until smooth.
