Black Bean Brownie Pancakes

Last weekend, I walked downstairs to discover all of my wildest, breakfast-infused dreams had come true. I had to share my birthday with the man JC himself, and the bday/Easter brunch that my mom created was nothing short of magic. There were pancakes and frittatas and bacon and fruit and coffee and cake.  Because of this, I didn’t even need to make my own pancakes for Plancake Sunday’s so I’m picking back up this week while still celebrating just because.

Ingredients:

  • 1/2 of a 15 oz. can black beans, drained and rinsed
  • 1 flax egg [1 Tbsp. flaxseed meal + 2/5 Tbsp. water]
  • 1 tbsp coconut oil
  • 1/4 cup cacoa powder
  • 3 Tbsp buckwheat flour
  • 1/4 cup unsweetened almond milk
  • 1/2 tbsp vanilla extract
  • 1 tsp maca powder
  • 1 tbsp raw honey
  • 1 tbsp maple syrup
  • 1 tbsp baking powder
  • 1/2 tsp finely ground espresso powder or instant coffee granules

Directions:

Make flax egg by mixing ground flax with water.  Let sit for 5 minutes. Add everything in a blender and mix until smooth.  Toss on a griddle and top with toppings (I used almond butter with just a pinch of dramatic because Katie your birthday was a week ago, give it up already.)
