Banana Oat Energy Cookies

I refuse to ever move at a pace faster than 3.2 mph.  If ever I “go” on a “run,” I end up sprinting when a car goes by hoping to look stealth, followed by such a severe cramp that I’m forced to call my mom to come pick me up.  So I was both disturbed and disoriented when discovering a friend was running a half marathon.  I mean I guess good for her? Anyways, I figured I’d show my support by making her pre-run cookies.  They’re low in sugar, and high in protein and carbs, making it possible for her to maintain a pace faster than 3.2 mph so that it doesn’t take her 4+ hours to finish the race.

Ingredients:

  • 1 cup gluten free oats
  • 1 cup walnuts, roughly chopped
  • 1 medium ripe banana, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond butter
  • 1/4 cup flax seed, ground
  • 2 tbsp chia seeds
  • 2 tsp maca powder
  • 2 tsp cinnamon
  • banana slices, for decoration (optional)

Directions:

  1. Preheat oven to 350 degrees
  2. Mix together all dry ingredients
  3. Add wet ingredients and use hands or fork to mix together
  4. Form small circles on a baking tray, coated with coconut oil baking spray
  5. Decorate each cookie with a slice of banana
  6. Bake 15 minutes, cool for 10 minutes. Makes approximately 12 cookies

These cookies are packed with protein and omega-3’s, most notably featuring: maca, flax seed and chia seed.The added maca powder increases energy, boosts sex drive, improves complexion, and balances mood.  Flax seed been used to treat a variety of chronic illnesses, cancer, arteriosclerosis, and strokes to name a few. It does so by stimulating the bio-oxidation of cells and assisting in oxygenation of every cell in the body. Lastly, chia seeds are packed with antioxidants, fiber, protein, and have been shown to lower the risk of heart disease and type 2 diabetes. They can even improve exercise performance the same if not better than a sports drink.  These cookies, therefore, a great treat for a pre or post-workout.  Enjeeeeeeeoy.

    You’re hilarious!! That’s kind of sort of maybe definitely what my “runs” look like too…in any case, you’re a great friend for supporting your friend with cookies. Definitely the best kind of friend!!
