Banana Almond Oat Cookies

I may begin a journal detailing all of the bizarre places I stumble upon old nut butter. Phone case, pillow, and steering wheel are all obvious suspects. But herein marks the day that I discovered cashew butter…on my underwear. It’s not what you think. Or maybe it is? While tinkering in the kitchen, I tend to remain stressless and pantsless. And as evidenced by this photo, I am very liberal with my cashew butter drizzling. I am filled with more pride than shame about this. I wear my nut BUTTers with prideĀ (lol because my underwear also touches my butt?). Anyways, this recipe has only 5 ingredients and doesn’t require anything raw. It’s quite easy and I love having these for a quick snack during a busy week. Find the recipe below!

Modern Oats Cookies

  • 1 cup oats (I used ModernOats 5 berries – no added sugars and lots of seeds / nuts for a nice cookie crunch)
  • 1/2 cup almond flour
  • 1 large ripe banana
  • 1/4 cup dark chocolate chunks
  • 1 tbsp cashew butter
  1. Preheat oven to 350
  2. Bake for 8-10 minutes, until top has hardened slightly.
  3. Drizzle more nut butter on top.
  4. Check all articles of clothing for said nut butter before going out in public.
